My latest mistake ranks right up there with the magnifying mirror debacle. I missed National Chocolate Eclair Day! What?! It was Tuesday and I danced right over it like it didn’t exist. I mean, no way! But, no worries, I’ve got a quick fix.
I made REAL eclairs with my mother when I was young. I still remember licking that creamy vanilla filling off my fingers (and the bowl…and the beaters…no shame).
But when I became a mother, I found this delicious shortcut to eclairs. I’ve used many different recipes–some use more whipped topping, some less Karo syrup, but all YUMMERS!
Here’s a recipe that my friend Brenda published in her family cookbook. ENJOY!
Eclair Squares
Ingredients:
1 box graham crackers
2 3-oz instant vanilla pudding
3 C milk
8-oz Cool Whip
Topping:
2 oz semi-sweet chocolate
3 T butter
3 T milk
2 T light Karo syrup
1 T vanilla
1 1/2 C powdered sugar
Instructions:
- Grease 9×13″ pan. Cover bottom with one layer of crackers.
- Mix pudding and milk until thick. Fold in Cool Whip. Pour 1/2 of the pudding mixture over the graham crackers.
- Layer more graham crackers. Top with pudding mixture and then one more layer of graham crackers.
- Melt the chocolate, butter, and milk in the microwave on medium. Add Karo syrup, vanilla, and powdered sugar. Then beat until smooth.
- Spread over the top layer of graham crackers.
- Refrigerate overnight.
Yes, It’s That Easy!
You can make this up to 2 days early. Just store it in the fridge with plastic wrap over the pan.
You can use canned chocolate icing if you’re pressed for time. Just take the foil seal off the can and microwave it for 15-20 seconds. That will make it easy to spread over the top layer of graham crackers.
The kids will love it. The adults will love it. YOU will love it! And you never even turned on the oven–an extra bonus for this time of year.
