Everybody I know is celebrating National Eat Dessert First Month…Okay, not everybody. But everybody should! I mean, why wouldn’t you want to?
I think some Europeans do. It’s tres chic.
As promised, I’m giving you two of my sister-in-love Tonya’s favorite recipes. They are soooo delicious.
The first, banana pudding, can be adapted for a gluten-free diet, which is on our radar since two members of our family have gluten issues. Her other home-run dessert is both gluten-free and Keto-friendly.
And the amazing thing is…They both really are good enough to be on a Favorite Desserts list!
Tonya’s Banana Pudding
Ingredients
1 (14-oz) can sweetened condensed milk
1 1/2 C cold water
1 four-serving size package instant vanilla pudding mix
2 C (1 pint) Borden Whipping Cream, whipped
36 Vanilla Wafers
3 medium bananas, sliced and dipped in lemon juice
Directions
In large bowl combine sweetened condensed milk and water.
Add pudding mix, and beat well.
Chill 5 minutes; fold in whipped cream
Spoon 1 cup pudding mixture into 2 1/2 quart glass bowl
Top with one third of each of the bananas, wafers, and pudding.
Repeat layering twice, ending with pudding.
Chill. Garnish as desired. Refrigerate leftovers.
My recipe is just a little different, so I included it to give you a choice!
Tracey’s Banana Pudding
Ingredients
1 (5-oz) package instant vanilla pudding mix
2 C cold milk
1 (14-oz) can sweetened condensed milk
1 T vanilla extract
1 (12-oz) container frozen whipped topping, thawed
1 (16-oz) package Vanilla Wafers
Several bananas, sliced (I usually use around 4-6, depending on their size)
Directions
Mix pudding mix and milk for 2 minutes. Stir in condensed milk. Fold in thawed whipped topping.
Layer cookies, bananas, pudding.
NOTE: To make this gluten-free, I use gluten-free graham crackers. I promise it’s good this way!!)
Another (Healthy-ish) Fave
Tonya got this recipe from her son-in-love and made it for one of our siblings get-togethers. Since her brother is gluten-sensitive, she made these gems for dessert and we all LOVED them!
Keto Chocolate Chocolate Chip Cookies
Ingredients
1 C almond butter
1 C coconut sugar
2 eggs, whisked
1/2 C cocoa powder
1 t baking soda
1 t. vanilla
pinch of salt
1/4-1/2 C Enjoy Life Mini Chocolate Chips
Directions
Mix almond butter and sugar then add whisked eggs.
Add cocoa and mix
Add remaining ingredients and mix.
Using large spoonfuls, divide mixture into about 15 cookies on a parchment-lined cookie sheet.
Bake at 350 degrees for 10 minutes.
These cookies are soft and remind me of brownies. I prefer them warm…I kinda have a thing for warm cookies. A 7-10 second zap in the microwave makes them as yummy as fresh out of the oven!
Time For You to Come Clean...
As National Eat Dessert First Month continues, I really need to hear from you, people! What dessert is good enough that you would eat it first?
Consider this your duty because it’s a National Holiday. Okay, maybe not an official holiday, but an officially designated month. A whole month dedicated to eating desserts first. Come on…you know you want to get on board this train!

Love the idea of dipping those banana slices into lemon juice to stop enzymatic browning! Just never thought of using that method with bananas. I’ll be sad when this eat dessert month is over! WW still doesn’t allow me to eat all of these great desserts often…I still love seeing them in my inbox from you, friend!

When I started taking my grandson to church on Wednesday nights, they had a dinner before all the activities started. The first night they had Twinkies for dessert. He asked me if he could eat the Twinkie first. I said, why not. After that he told my other grandkids, Gran lets you eat dessert first. Why not? They are in middle and high school now, but they still talk about me letting them eat their dessert first.
